Traditional leather, non-GTX footwear is usually good enough for most uses. The trick is to treat them as waterproof as needed. This can be done with polish, oil, grease or even spray-on treatments, or a combination of these. The more you impregnate them, the less they breathe. Use good socks and you'll be happy.

For absolute care-free waterproofness, use boots with membrane.
