If you want to focus on doing things with your knife and the art of honing them with five stones is not your thing, choose this sharpener. In addition to our puukko-style knives, it also works on kitchen knives and also serrated bread knives, which we didn’t believe before we tried it.
AccuSharp Pro is a super easy-to-use knife sharpener from the USA. It will make all your knives sharp in a rough, yet practical manner. Even when you are tired, it is dark, and you want it done fast.
The nominal sharpening angle is 21 degrees. The micro bevel on our Terävä Jääkäripuukko and Skrama 80 knives is 23 degrees but we recommend this anyway: how many of you can maintain a consistent angle of 1 degree per side? If you're that skilled, you probably have a set of wet stones and have practiced a lot - this product is not for you.
Use
Set the knife on a table, with the cutting edge up and the blade tip extended past the edge of the table. Place the V-shaped notch on the cutting edge and try to get it straight and square to maintain an even angle on both sides.
Draw the sharpener along the edge of the blade towards the tip. Work in one direction only, don't push. Do not press the sharpener! The contact area is very small so this requires even less pressure than working with sharpening stones. Feathering draws are the way.
The sharpener is very effective and even a few strokes make a clear difference. Especially after the blade angle is the same as the sharpener's, it only takes a few strokes per session.
Aren't these the ruin of your blade?
This sharpener is designed to be easy and fast and it is a tradeoff: if you really put your mind to it, you could wear the blade faster with this thing compared to babying it with fine wet stones. Also, it will not give you a monomolecular edge fit for the ancient Japanese sword polishers.
It's worth keeping a cool head and remember that blade-enthusiasts have a dramatic way of expressing their opinions on sharpening.
Materials
The handle is made of aluminum and plastic, and the fingerguard is also plastic so that it won’t damage the blade. This device won’t rust and so you can use it even in the wet bush. You can also easily clean it with soap and water.
The blades of the sharpener are made of high-grade tungsten carbide, which is hard as fuck, so they should last a few years. When they finally get worn, you can reverse them to double their life. You can also replace them, so no need to throw this out when they are finally dead.
